To say thank you, I’m sending you a super simple recipe that I absolutely love. It’s called "Cinnamon Flop"--but it definitely wasn't a flop with my family!

I found this simple coffee cake maybe twenty years ago in a magazine--and I used to make it all the time when my oldest kids were little. It's a delicious and frugal breakfast-in-a-pinch recipe from ingredients you're likely to have on hand! Win!

Cinnamon Flop

Mix together:

  • 1 TBSP oil
  • 1 cup sugar
  • 2 tsp baking powder
  • 2 cups all purpose flour
  • 1 cup milk (I ended up using maybe half a cup more milk to get the right consistency).

Pour into a well greased 9" x 9" pan. Sprinkle the top well with brown sugar (about 1/2 cup) , and dot with pats of butter (about 4 TBSP). Then sprinkle cinnamon on top and bake at 350 for about 30 minutes (I baked mine for 35) or until a toothpick comes out clean.

I wasn't speedy enough to get a picture of the whole coffee cake--my family descended on it like starving hyenas. But, hey, at least we know it was good!
